Sweet, I just bought some Zuke's yesterday, lol I'll give it a try. Here's another way I like to cook them. Mix up a Tempura batter, substitute water with Beer if desired. Slice zuchini's either crosswise or lengthwise in 1/8 - 1/4" slices. Dip slices in tempura batter and drop into deep fat fryer and cook until golden brown or, in a saute pan with a good amount of olive oil in it. Add some garlic slices into the saute pan if desired but remove them before they turn brown or they will become bitter. Make sure the oil in either case is hot before adding the zuchini slices to it or they will soak up the oil and become soggy. Mmmmmm.....

You know its slow in the news department when we start sharing recipes. I have one for Taco Soup if anyone is interested. Taco Soup2 lbs of ground beef, brown and drain 1 can of Rotel 1 can of diced tomatoes 2 cans of pinto beans with jalepenos 2 cans of corn 2 cans of hominy 1 can of garbonzo beans 1 package of taco seasoning 1 package of Ranch Dressing mix Do not drain the juices from the cans. Add 1/2 - 1 cup of water until the desired consistency (broth) is achieved. Heat and serve. Enjoy! If you want to change things up a bit, strain the juices, wrap in flour tortillas, deep fry and cover with queso cheese.
